Yes; I recommend using lm-sensors for monitoring linux servers. As for Windows, I recommend first installing any applicable vendor agents (IBM Director...etc); then install the http://deve.loping.net/projects/sfsnmp/ SpeedFan SNMP extension; from their you can grab the data you want over SNMP.

Alternatively you can use http://www.wtcs.org/informant/free/free-overview.htm this Windows SNMP agent instead of SpeedFan.

I have been looking into monitoring fans and temp over WMI; but I haven't quite fine tuned that process just yet.
