Zenoss monitor processes using UCD-SNMP-MIB::prTable. It uses a combination of HOST-RESOURCES-MIB::hrSWRun and HOST-RESOURCES-MIB::hrSWRunPerf to be compatible with any SNMP agent exposing the HOST-RESOURCES-MIB rather than just Net-SNMP agents.
That being said, to troubleshoot why you might be getting that "Unable to read processes on device" error, you should look to the hrSWRun and hrSWRunPerf roots. These contain information for all processes running on the system, not just ones you explicitely identify in your snmpd.conf. For this reason they take longer to walk and you could just be running into a timeout.
To address timeouts you could try to increase the zSnmpTimeout, zSnmpTries or even zMaxOIDPerRequest.
